Westglow Recipes: Local Mixed Greens Salad

Salad

Salads are staples in warm weather meals. Homemade dressings have become popular in kitchens everywhere and shopping for fresh and organic ingredients has made even the most traditional salads healthier.

However, salads can leave us craving a little more to our meals. They have the potential to lack the substance of hearty winter fare. Luckily, Rowland’s Restaurant has the perfect solution. The secret: crispy vegetables.

A Westglow Newsletter

Westglow Resort & Spa - Freerica Georgia

We’ve all flipped through our fair share of newsletters. They’re readily available for skimming in e-mails, and business waiting rooms around the world. However, most of those newsletters leave our brains as soon as they enter them.

So what makes a Westglow newsletter different? Each edition is a property wide collaboration. Westglow’s owners give inside tips, our chefs provide recipes, our Spa Director highlights unique retail suggestions, and our Wellness Director gives seasonal fitness tips. That level of teamwork ensures that each release is something exciting, memorable, and unique. The overall effect is something worth reading.

Every newsletter begins with a Letter from the Owners. Bonnie and Jamie Schaefer are actively involved at Westglow and the Letter gives them the opportunity to share the aspects of Westglow they love most with our valued patrons. The Letter gives customers a chance to look behind the curtain at Westglow as well. Insider information such as Bonnie’s daily Farmer’s Market trips add a personal touch, while also letting our guests know their meals at Rowland’s are infused with the best local ingredients.

Using fresh, local ingredients from our Farmer’s Markets and other High Country sources means we introduce rotating or seasonal menus in our newsletters as well. Accompanying those menus are recipes that guests can try in their own kitchens. Click here to view our most recent recipe and others!

Most importantly, the Westglow newsletter gives us the chance to share what’s happening on and around the property. Now, we have Mother’s Day Brunch, a wine dinner, gift certificate specials, and our Face Time Me Package. In the fall, we might have midweek specials, discounted lodging rates, and new wine offerings. Each newsletter features different offerings than the last, making each season new and unique.

Westglow Recipes: Gazpacho

Gazpacho - Rowlands(1)

It’s been a week since our menu tasting and we’re still dreaming of light, warm weather fare. Our cool Gazpacho has been a longtime favorite and we’re happy to feature the dish on our spa lunch menu often throughout the warmer months. The dish is a light and healthy alternative to heavy winter options and, in the spirit of springtime happiness, we’ve offered it on the recipes page of our website.

Our recipes give guests and visitors an opportunity to bring a taste of Rowland’s Restaurant into their homes and we look forward to adding new recipes to our website soon!

Spring and Summer Menu Tasting

Bee

At least twice a year, Westglow’s owners Bonnie and Jamie sit down with General Manager Steve Price to go through all of the potential dishes for our new menus. All of our chefs, headed by new Executive Chef Colin Patience, work jointly to create, prepare, and present all aspects of the potential menus. Gary Brown, Restaurant Manager and Sommelier, oversees the whole process and is close at hand to take notes on the preparation process and tasting suggestions.

Right now we’re on the third day of our new spring and summer menu tasting. The first two nights were a huge success, with many dishes earning high marks from Bonnie, Jamie, and Steve. The Marcho Farms Veal Loin, Bee Pollen Dusted Foie Gras, and the Banoffee Tart dessert have been among the favorites thus far. Look at the amazing presentation of the Foie Gras above!

Each dish is carefully judged on taste, presentation, and seasonal appropriateness. For instance, if a salad was deemed too light for a fall menu, Bonnie and Jamie may resurrect the idea for the summer round. On this menu, we are especially excited about the varying presentations. Chef Colin is credited with taking the look our dishes to a new level. Bonnie Schaefer commented, “Colin is so artistic!”

The menu will be released to the public in the upcoming weeks. Until then, be on the lookout for more sneak peeks!

Rowland's Restaurant at Westglow Resort and Spa

Every year, the most promising sign of spring in the High Country is turning the clocks up one hour. The extra hour of daylight welcomes an exciting and energetic time to the mountains and Westglow is no exception.

Winter at Westglow

Rowland's Restaurant at Westglow Resort and Spa

You’ll often hear winter described as a time when the Earth goes to sleep after a long year of sun and greenery. While there is an amount of tranquility in that imagery, winter at Westglow is anything but asleep.

Unless it’s simply too cold for fingers and toes, our days begin with Westglow’s daily guided hike. A unique winter hiking experience guarantees brisk rejuvenation and peaceful forest reflections. With less people around than in the warmer months, our hikers are more likely to see families of deer and other wildlife running around the quiet trails.

Back at Westglow there’s hot coffee and soothing warm ginger tea waiting for all guests. Complete the perfect winter scene by sipping either beverage by the windows in your room or curled up in our Relaxation Lounge. More likely than not, there will be snowflakes to watch.

We know that people begin working towards their summer figures as soon as the new year begins and our fitness classes certainly do not attest to winter’s sleepy stereotype. We offer personal training sessions year round and our daily fitness schedules include cycling, fitball, yoga, and water aerobics.

Meals at Westglow during the winter months are no less inventive than their warm season counterparts. In fact, our chefs excel at taking unique advantage of High Country winter ingredients and traditional dishes. Click here to view our creative and indulgent menus.

To help guests take full advantage of the winter season, we are offering a variety of winter midweek specials. Click here to view them or call today to book your overnight stay or Day Spa Package at discounted rates.
